apple streusel coffee cake


So I just started a new gig as a waitress and have been struggling to figure out how to balance my time. And the result has been cooking less then normal. But I didn’t work the other morning and sat up to the realization that I needed coffee cake!

But then all the strawberries I had left were… well…

Let’s just say they were old.

But I had three apples left over from a pie I had made! And so I used the recipe I have for coffee cake that I really like, and added apples and cinnamon to it.


I like the recipe because it is fluffy but still very moist. And delicious.

The most important things I can tell you about this recipe are

1) make sure you preheat your oven. It needs to be nice and hot if you want a crunchy streusel layer and

2) make sure you use cold butter in the streusel. If you try andcheat and use room temp butter you will end up with a sticky mess. Cold butter can be frustrating at first but trust me, it’ll be worth the fight.


Apple Streusel Coffee Cake

Coffee Cake

1 egg

1/2 cup milk

4 Tbsp butter, very soft


1  1/4 cup flour

2  tsp Baking powder

1/2 cup sugar

1/2 tsp salt

1 tsp cinnamon

3 small or two large apples.  Any kind you like or just have on hand will be fine. core and sliced thinly.


For the Streusel:

1/2 cup sugar

1/4 cup flour

1/4 (4 Tbsp) butter, cold and cut into chunks

2 tsp cinnamon


Preheat oven to 400 degrees.  This step IS important if you want crunchy streusel.

beat together the egg milk and butter till smooth and fully mixed.  Add the flour, baking powder, sugar, salt and cinnamon.  Mix just till smooth.  Don’t over mix.  Add the apples and stir to incorporate.

grease an 8×8 baking pan and pour in the cake batter.  smooth so everything is laying evenly.

Now to make the streusel!  Place sugar, flour, and cinnamon into a small bowl.  Using either a pastry cutter or a fork, cut the cold butter into the dry ingredients.  this might take a while if you have not done it before but keep at it until a fine crumbly mixture forms.  Sprinkle this on the top.

bake for about 30 minutes of until the cake springs back up when you poke the center with a spoon or your finger.

Eat it hot or eat it cold, but whatever you do,
